When all else fails, Banana bread!

We’ve all been in a situation where we buy bananas to consume as a snack, a side dish or a healthy smoothie but sometimes end up forgetting about them once they’re on the countertop in the kitchen. Yes, we tend to pick one or two from the bunch on our way out or even when we’re ‘bored’ but most times, they end up too ripe and we’re not very eager to have them when they start to brown on the outside.

They say that the best bananas are not the brightest yellow of the bunch but those that are slightly riper. However, what happens when you buy an already ripen bunch of bananas and are not able to finish them in time before they over-ripen? The answer to that question is none other than… Banana Bread.

Banana bread is one of the simplest loaves to make as all the ingredients it requires doesn’t necessarily need to be pre-purchased. Everything you need to make this delicious bread can be found in your kitchen.

In this article, we’re going to give you a few recipes of the different types of banana bread you can make if you ever find yourself with over-ripen bananas. These 3 recipes are super easy to make, and we guarantee you an abundance of flavor.

Simple Banana Bread

Prep time: 10 minutes

Baking time: 45 minutes

Ingredients:

  • 2 cups of all-purpose flour
  • A quarter (1/4) teaspoon of salt
  • 1 teaspoon of baking soda
  • 3 ripened bananas
  • A quarter (1/4) cup of milk
  • 1 teaspoon of vanilla
  • 2 large eggs
  • 8 tablespoons of unsalted butter (melted)
  • 1 cup of granulated sugar
  • Half a cup of chopped nuts (optional)

Steps:

  • In a large bowl, sift together the all-purpose flour, salt and baking soda.
  • In a separate bowl, whisk together the sugar and melted butter until well combined or until the mixture is fluffy. Once fluffy, crack the eggs into the mixture until smooth. Follow this up with the milk and vanilla.
  • In a separate bowl, mash up your bananas until soft. When your bananas are nicely mashed leaving a bit of chunks of banana, add into the batter followed by the dry ingredients (flour, salt and baking soda mixture).
  • Fold in the nuts into the batter (optional).
  • Pour the batter into a greased bread pan and bake in a pre-heated oven at 176C for 40 to 45 minutes.
  • Once well baked, leave out for about half an hour to cool then slice your bread and indulge in the flavors of the ripened bananas!

Raspberry Banana Bread

Prep time: 10 minutes

Baking time: 50 minutes

Ingredients:

  • 1 and a half cup of all-purpose flour
  • Half a teaspoon of salt
  • Half a tablespoon of cinnamon
  • 1 teaspoon of baking soda
  • 1 teaspoon of baking powder
  • 4 large ripened bananas
  • 2 teaspoons of vanilla
  • 1 large egg
  • 3 tablespoons of honey
  • A quarter (1/4) cup of brown sugar
  • 1 tablespoon melted coconut oil
  • 1 cup of raspberries/strawberries

Steps:

  • In a large bowl, sift together the all-purpose flour, salt, cinnamon, baking soda and baking powder.
  • In a separate bowl, mash up your bananas until soft. When your bananas are nicely mashed, crack in the egg then add the brown sugar, vanilla and honey then mix.
  • Transfer the banana mixture into the bowl of the dry ingredients. In this case, the flour mixture and combine well by adding the melted coconut oil.
  • Add the raspberries or strawberries (depending on your preference) into the mixture and fold it in.
  • Pour the batter into a greased bread pan and bake in a pre-heated oven at 176C for 45 to 50 minutes.
  • Once well baked, leave out for about an hour to cool then slice your bread and enjoy!

Peanut butter Chocolate chip Banana bread

Prep time: 10 minutes

Baking time: 35 minutes

Ingredients:

  • 1 and a half cup of all-purpose flour
  • 1 teaspoon of salt
  • A third (1/3) cup of milk
  • 1 teaspoon of lemon juice
  • 1 teaspoon of baking soda
  • 3 large ripened bananas
  • 1 and a half teaspoons of vanilla
  • A quarter (1/4) cup of peanut butter
  • 1 tablespoons of honey
  • A quarter (1/4) cup of brown sugar
  • 1 tablespoon melted coconut oil
  • Half a cup of chocolate chips

Steps:

  • In a bowl, add milk and lemon juice, stir and set aside.
  • In a large bowl, sift together the all-purpose flour, salt and baking soda.
  • In a separate bowl, mash up your bananas until soft. When your bananas are nicely mashed, add brown sugar, vanilla, honey and peanut butter then mix.
  • Transfer the banana mixture into the bowl of the dry ingredients. In this case, the flour mixture and combine well by adding the melted coconut oil.
  • Add the milk and lemon juice mixture into the batter and fold in the chocolate chips to complete the batter.
  • Pour the batter into a greased bread pan and bake in a pre-heated oven at 176C for 30 to 35 minutes.
  • Once well baked, leave out for about half an hour to cool then slice your bread and enjoy every bit of the yummy peanut butter and chocolate chip flavor!
