Story Behind The Recipe

I had this dish at a friend’s house… Some say its origins are Croatian, some say its from Italy, nevertheless the dish is delicious and very easy to make. There are several ways to make it, I have tried a couple of times and have settled for this method. Go ahead and be creative!

Ingredients

  • 500gms Prawns (you can also use shelled – deveined prawns)
  • 4 spoons olive oil
  • 3 cloves garlic
  • 150ml white wine
  • 2 tomatoes cut into small pieces
  • 2 spoons tomato paste
  • 1 spoon breadcrumb
  • a handful of parsley (chopped)
  • Salt and pepper to taste

Instructions

Sprinkle some salt, crush one garlic clove add to the prawns, mix well, leave aside for a few minutes, while you prepare and chop the rest of the ingredients. Fry the prawns in olive oil for a few minutes, remove from the pan, add some white wine to the pan, the rest of the crushed garlic cloves, tomatoes, breadcrumbs, parsley and the seasoning. Let it simmer and reduce about 10 minutes, return the prawns back into the pan and cook for 5 minutes. Serve with bread to mop up the juices.
